So the Frenchie loves Pâtes Carbo- seriously Penne Carbonara, I can’t think of anything more boring, not to mention unhealthy. But my mother always says that relationships are all about compromise, and so compromise I did…

The chorizo cooked with rosemary, garlic and chilli creates great flavours. Replacing the cream with Natural yogurt (reduced fat in our version) is a great way to retain the taste but reduce the fat content. Although of course I did mix in the cheese as recommended to ensure it was a little bit naughty! However in the end it was the greens that were his favourite part- maybe it’s because the name made him feel at home but adding oranges and a honey based dressing did add a great sweet taste that reminds you of the mediterranean. Also I love pine nuts and so that was an added bonus.
Et voilà.. le compromis – Pâtes Carbo avec Chorizo.
