Rainy days call for comfort food

Following on from Jamie Oliver’s theme of ideas for comfort food I did the very same thing. Graced with a day of non stop rain the only way I could cheer myself up was with these heart warming dishes.
Soups are perfect accompaniments to warm up a sad day. Last night I used seasonal pumpkin to make a squash soup. By adding chopped squash to a base of onion, carrot and celery. Simmering over a low heat for 30 mins together with a little chicken stock and thyme and S&P seasoning gives you a tasty satisfying treat. Blended together with a chunk of crusty bread it should get you in the mood for a Monday night in escaping from the rain.
And for dessert (everyone knows dessert is essential in the face of miserable weather) I chose a satisfying mixed fruit compote. Having already made a mixture of apple and mixed red berries together heated together with 1 tablespoon of Demerara sugar and 2 of water and a dash of cinnamon gave it the comforting factor it needed. Served with a spoon of vanilla ice cream, this simple pud created a much needed feeling of decadence for an otherwise sad and rainy Monday night.
