A true French Classic: TARTIFLETTE

Missing French food back in the UK is unfortunately a regular occurrence for me, especially when I catch up on TV with Rachel Khoo’s “my little Paris kitchen”, filling me with inspiration. After a particularly bad Monday at work this week, I came home to a fantastic surprise from my thoughtful frenchie to cheer me up, a heart-warming dinner of Tartiflette. So no I hadn’t spent a day on the slopes skiing to burn off the energy that this high calorific treat would replace, but I had been to an early morning spin class to burn off some calories, does that count??

A fantastically easy way to warm up those autumn blues, and looking at the rainy weather outside tonight could be your night. Fry potatoes with some oil and 2 diced onions as well as a clove of garlic for around 15 minutes whilst cooking separately the pancetta. Then layer potatoes, onions and the pancetta with small pieces of Reblochon cheese in an oven dish, adding large thin layers of cheese to cover the top of the dish before baking in in the oven for around 20 minutes. We couldn’t get hold of Reblochon and so replaced it with Epoisse – a new fantastic french cheese that I have now discovered and a great find which works just as well as Reblochon in a Tartiflette. A fantastic and simple mid-week treat, but WARNING high in fat and cholesterol and so must be eaten in moderation!
