So the tarte aux pommes was a success. We bought the cooking apples from the cute farmers market at Barnes, not too overpriced for london and great quality. The idea of adding a cinnamon infused compote to the base is a winner. With a simple mixture of sugar water and cinnamon to accompany the chopped apples the result is a yummy compote to spread all over the pastry tart base ( pre bought, why bother with homemade this day and age) add the sliced apples and top with another delicious helping of the compote to make a scrummy tartes aux pommes. Next time I’ll be trying it with pears to try and rival a recent recipe of my maman in law.
